‘One Sip and you’re in The Caribbean…’
So I have a thing about bananas. Banana in a dessert and even on the rainiest of days I am transported to Tenerife. Banana in a cocktail and I am instantly kicking back on a Caribbean beach. And no, don’t even think about asking me to join your beach volley ball team…
This is the recipe for my infamous (amongst friends… and somewhat reluctant family members) Miss Pollyanna’s Banana Slammer.
Fruity, punchy, creamy, dreamy and most definitely alcoholic – all in equal measure.
Just promise me you will serve it with a cheeky little cocktail umbrella. This ain’t no smoothie!
Ingredients:
1 and a half measures white rum
1 tablespoon coconut cream
3 tablespoons mango juice
3 tablespoons pineapple juice
4 ice cubes
1 measure creme de banane
1/2 banana
Serves: 1 in a tall glass… or 2 ‘lightweights’ in tumblers.
Method:
Using a suitable electric appliance, blend together the rum, coconut cream, juices and ice – just for half a minute so everything is nice and slushy. Add the creme de banane and fresh banana and blend for a further 15 seconds.
This is most definitely a tall glass drink, but the above amounts should also wield enough heavenly nectar that two can happily partake in a snappy tumbler.
