Ditch the Iceberg, Healthy Just Got Interesting!

Spring is her, apparently. Don’t look out the window, just take my word for it. Time to think about getting into our summer bikinis. Plus with Easter nearly upon us, why not offer up something exciting and healthy alongside your roast lamb and ten thousand chocolate Easter eggs?

So, in true Lady Lolita ‘can’t be arsed to cook’ style – I have put together three of my favourite super sexy salads to wow your guests (and make them feel less guilty about the chocolate frenzy). Bright, colourful, tasty and easy to make… this Spring you can stay healthy AND look like a Domestic Goddess. Perfect.

Fig, Spanish Jamon and Parmesan Salad

– Rocket
– Ripe figs
– Parmesan shavings
– Thin slices of Jamon Serrano (or Parma Ham)
Dressing: Olive oil and honey

Lay the rocket on the plate and roughly open the figs and lay on top, along with the cheese and thinly folded ham. Drizzle over the dressing. The saltiness of the Parmesan coupled with the sweetness of the figs and honey along with the peppery zing of the rocket is a simple but tasty explosion of loveliness. And it looks pretty fancy too!

A Different Kind of Caprese Salad

Everyone knows that the Italian love their flag-inspired red, green and white salads – but this is a new take on the Med favourite.

– Selection of cherry tomatoes (including yellow, dark and mini plum tomatoes)
– Buffalo Mozarella cheese
– Baby leaf basil
Dressing: Olive Oil and plenty of salt and pepper

Cut the cheese into thin round slices and lay prettily on a plate. Cut the cherry tomatoes and sprinkle on top with plenty of salt and pepper. Drizzle the olive oil and scatter the tiny leaves of the basil. It takes less than 5 minutes but looks pretty impressive.

Grilled Zucchini, Feta and Olive Salad

I love this salad as it’s a meal in itself. You can grill the zucchini on the barbecue or in a griddle pan, either way make sure it retains the stripes as it looks cool!

– 2 x medium zucchini
– Rocket or Lambs Lettuce
– Cubed Feta cheese
– Black olives
– Walnuts
– Parsley
Dressing: Olive Oil and half a lemon

Cut the zucchini thinly length ways, then fry in a griddle pan or a barbecue. Put to one side. Lay your rocket or lambs lettuce in a dish, add the strips or zucchini, cubed Feta, some grated lemon zest (optional) and black olives. Dress with olive oil and a squeeze of lemon. Scatter the walnuts on top along with the chopped parsley.
